Description
Garlic (Allium
sativum L.) is a food that needs no introduction. Its use began very
early in human history, and its benefits for the heart and blood
circulation were already valued in the Middle Ages.
Garlic is a good
natural source of some vitamins and minerals (B6, potassium, phosphorus
and magnesium) and, most importantly, it contains alliin, a sulphur
compound that turns into allicin when crushed or chewed. Allicin is
responsible for its smell, but also for its beneficial properties.
Cooking garlic inhibits the formation of allicin.
